Pour over the dark chocolate frosting and sprinkle with coconut or almond flakes.

Add the carrots (with the juice) and chopped walnuts and mix only gently now for a thick batter. Preheat oven to 180°C. Pour the into the pan covered with baking parchment paper and bake for about 25 minutes (adjust according to experience with your oven). Sprinkle immediately with powdered sugar.
Preheat oven to 150°C. Mix all ingredients into a light batter and pour the into the pan covered with baking parchment paper or into a greased pan sprinkled with flour. Bake for about 20 minutes (adjust according to experience with your oven).
Sugar can be replaced with honey or agave nectar. All-purpose flour can be replaced with spelt flour.
